润料是使粮粉从母糟中吸取一些水分和有机酸,以利糊化。润料40 min和50 min均比不润料的糊化率高1 %~3 %。润料40 min和50 min的糊化率基本一致。上甑时间越长,糊化率越高。蒸馏操作的要求:拌料均匀,轻撒匀铺,探汽上甑,边高中低,缓火蒸酒,大火蒸粮。蒸馏操作好的,可将酒醅中80 %的香味物质转移到酒中。上甑时间(甑容为1.5 m3左右)35~40 min的比上甑时间为20 min或50 min以上的己酸乙酯高20 %左右。(小雨) |

Material moisture referred to the absorption of some water and organic acids from maternal fermented grains to grain powder for better pasting. Compared with material without moisture treatment, material through 40 min or 50 min moisture treatment had 1 %~3 % higher pasting rate. And pasting rates were almost the same for material by 40min moisture treatment and material by 50 min moisture treatment. Besides, longer steaming time would result in higher pasting rate. And the requirements in distillation included even stirring, material scatter gently, material feeding after steam examining, more material on the margin and less in the center, slow fire for liquor steaming and wild fire for grain steaming. Good distilling operation could successfully transfer 80 % flavoring materials of fermented grains in liquor. Ethyl caproate content in fermented grains by 35~40 min steaming was 20 % higher than that by 20 min steaming or by above 50 min steaming. (Tran. by YUE Yang) |
